Baked Apple Oatmeal

A simple, make ahead breakfast recipe for busy families.

This baked apple oatmeal is warm, cozy, and requires almost no extra brainpower. The best part? You probably already have everything you need to make it.

It’s the breakfast I like to make when I don’t want to think about making breakfast.

Whether you prep it the night before or throw it together in the morning, this baked apple oatmeal is simple, nourishing, and full of fall flavor. It’s naturally sweetened, dairy-free adaptable, and the perfect solution for busy mornings when you still want to serve something homemade.

Ingredients

2 tbsp melted butter (or coconut oil)

1 ¾ cups rolled oats

¼ cup coconut sugar (or maple syrup — or sub brown sugar if you use refined)

½ cup chopped pecans

1 tsp baking powder

⅛ tsp salt

2 tsp cinnamon

1 ½ cups milk (we use oat milk, but almond or cashew milk works great)

1 egg

2 tsp vanilla extract

3 apples, finely chopped


Optional topping:

A splash of maple syrup and cream or yogurt when serving

A sprinkle of coconut sugar and dash of cinnamon before baking


Instructions

  1. Preheat oven to 350°F and grease a 9×13 baking dish.
  2. Mix dry ingredients in a large bowl: oats, coconut sugar, chopped pecans, baking powder, salt, and cinnamon.
  3. In a separate bowl, melt the butter and let it cool slightly. Then slowly whisk in the vanilla, egg, and milk to temper.
  4. Combine the wet and dry ingredients and stir until everything is well mixed.
  5. Chop the apples finely. Spread half of the apples into the greased baking dish.
  6. Pour the oat mixture over the apples. Top with the remaining apples, a light sprinkle of sugar, and a dash of cinnamon.
  7. Bake for 30 minutes, then let it cool slightly to finish setting.

    Serve warm, topped with cream and a drizzle of maple syrup.

This is one of those humble little meals that saves the day over and over again in our home. When I want something simple and comforting but still nourishing this is what I reach for.
