This simple, vegetable soup is sure to be a favorite with your family this fall. It can be thrown together in 15 minutes and tastes even better leftover, what’s not to love?

We’re heading into our busiest season over here at Casa de la Paul. I’ve had the pleasure of photographing so many babies all while celebrating my own. We have 5 birthdays in our house throughout the fall and I’m not mad about it. After all, what is life without things to rejoice over?! 

But busyness often means compromise. I haven’t been home as much to cook but I don’t want to skimp out on the meals we share together. So last week I thrummed through my fridge and cabinets and came up with what my family declares “the best vegetable soup ever”. It’s shockingly easy and my pleasure to share with you. Enjoy this simple and savory vegetable soup.

Simple + Savory Vegetable Soup

1 lb ground beef 

1/2 sweet onion, chopped

3 garlic cloves, minced

5 cups frozen mixed vegetables

1 carton chicken stock 

1 cup water

1 tsp thyme

2 bay leaves

Salt and Pepper to taste

Brown ground beef in a dutch oven. Add in seasonings, garlic, and onion and sautee until onions are tender. Dump in veggies, stock, and water. Bring to a boil and then simmer until ready to eat. 

Optional add ins: 

One can of drained petite diced tomatoes

Handful of macaroni noodles

Sliced okra

Any extra veggies you have on hand

After a quick google search, I found some one-day sourdough to go with it. This is great because my starter has been side-eyeing me from the door of the fridge for three weeks. It’s absolutely delicious, requires very little effort, and no overnight anything! Win-win-win. You can read all about it from Jami over at An Oregon Cottage.
